1\. 대구살은 키친타올에 올려 수분을 충분히 제거하고 소금,후추 간을 한다

2\. 감자는 스틱모양으로 썰어 물에 10분정도 담근 후 물기를 제거한다

3\. 밀가루, 베이킹파우더, 찬물, 소금약간을 섞어 튀김반죽을 만든다

4\. 대구살에 밀가루를 살짝 묻히고 튀김반죽을 묻혀 노릇하게 튀겨낸다

5\. 물기를 제거한 감자는 타지 않게 높지 않은 불에서 1차로 속을 익힌 뒤 2차로 바삭하게 튀겨낸다

\[Tip\]\* 감자를 물에 담궈두면 전분기가 빠져 속은 포슬하고 겉은 바삭해진다\* 1차 감자튀김을 할 때 타지 않게 충분히 튀겨준다\* 튀김반죽은 찬물대신 맥주를 사용해도 좋고,튀김 반죽이 귀찮다면 시판 튀김가루를 이용해도 좋다
